Pork cutlet Parmesan with Tortellini Napolitana

  • 1 OSM Napolitana 600ml
  • 2 OSM Cheese Tortellini 250g
  • 1/4 cup of all purpose flour
  • 1 egg
  • 1/2 cup of breadcrumbs
  • 1/2 tsp of dry thyme
  • 1/2 tsp of dry rosemary
  • 900g pork loin or loin chops
  • 1 cup of shredded mozzarella
  • 1/3 cup of grated Parmesan
  • Salt and Pepper to taste
  • Olive oil for frying


 Pork cutlet Parmesan

  • Pre Heat oven to 400F
  • Remove excess fat from pork loin and cut into 1/4″ thick slices.
  • Set-up breading station:
  • Pour flour into another shallow dish.
  • In a shallow dish, beat the eggs and season with salt and pepper.
  • Mix the breadcrumbs, rosemary and thyme in a third shallow dish.
  • Season the pork with salt and pepper. Working with 1 piece of pork at a time, dip it first in the flour, shaking off excess. Next, place the floured pork into the beaten eggs, coating completely.
  • Place the Pork into the bread crumb mixture and gently press crumbs into the meat. Set aside on large plate and continue with remaining Pork slices.
  • Heat a 10″ pan on medium heat. add 2 tablespoons of the olive oil
  • Add 2 pieces of pork and cook until the breading is golden-brown and crisp and the pork is just cooked through.
  • Place on a paper towel to drain away excess oil
  • Heat sauce in 14″ pan while frying the pork
  • Place a little of the hot Napolitana sauce on an oven tray.
  • Transfer the pieces of cooked pork on top of sauce.
  • Sprinkle on some parmesan, and top with mozzarella.
  • Put cooking tray in hot oven and bake for 5 minutes.
  • Broil pork for 60 seconds or until cheese is golden brown
  • Serve with a little parmesan and basil leaves

Tortellini Napolitana

  • Put Tortellini in boiling water and cook for 4 minutes.
  • Remove with a slotted spoon and place in the pan of hot sauce.
  • Stir until pasta is coated.
