Ingredients

  • 1 pack of OSM Cheese Tortelloni 250g
  • 25 – 30 cherry tomatoes
  • 25 mini bocconcini
  • 20 -25 basil leaves torn
  • 3 TBS olive oil
  • 2 tsp of balsamic vinegar
  • Salt and pepper

Preparation

  • Cook the tortelloni for 4 minutes. Strain and refresh in cold water.
  • Remove tortelloni from cold water and place in a bowl.
  • Put 2 TBS of olive oil on the pasta and mix it around
  • Heat a 10″ pan on medium high. Add 1 TBS of olive oil.
  • Add the tomatoes to the pan. Season with salt and pepper.
  • Cook for 3- 4 minutes or until the skin of the tomatoes blister.
  • Move the tomatoes around every 20 – 30 seconds while cooking.
  • Put the tomatoes in the bowl with the pasta
  • Add the cheese and torn basil leaves to the pasta and tomatoes.
  • Add the balsamic vinegar and mix it all together. Season with salt and pepper
