Tortellini Cheese, Artichokes & Ham

Ingredients

  • OSM Cheese Tortelloni 2 x 250g
  • 250g or 1 cup ham diced into 1/4″ x 1/4″ x 1/2″ rectangles
  • 8 artichoke hearts quartered
  • 1/2 cup of red onions sliced thin, then halved
  • 2 cloves of garlic chopped
  • 10 large basil leaves cut into chiffonade
  • Parmesan Cheese
  • 4 TBS of olive oil

Preparation

  • Heat a 12″ pan on medium heat.
  • Add 2 TBS of Olive oil.
  • Lightly fry onions for 2 minutes or until they soften slightly and the colour fades.
  • Add chopped garlic and fry for 30 seconds. Add Ham and fry for about 3 minutes.
  • Add the artichokes and cook for another minute. Remove from heat
  • In a pot of boiling water, cook the tortellini for 4 minutes.
  • Carefully remove the pasta with a slotted spoon and add to the pan.
  • Add 2 TBS of olive oil. Gently mix until everything is coated
  • Plate. Add Parmesan, fresh basil, and fresh ground pepper
