Pork cutlet Parmesan with Tortellini Napolitana

ingredients

  • 1 OSM Napolitana 600ml
  • 2 OSM Cheese Tortellini 250g
  • 1/4 cup of all purpose flour
  • 1 egg
  • 1/2 cup of breadcrumbs
  • 1/2 tsp of dry thyme
  • 1/2 tsp of dry rosemary
  • 900g pork loin or loin chops
  • 1 cup of shredded mozzarella
  • 1/3 cup of grated Parmesan
  • Salt and Pepper to taste
  • Olive oil for frying

preparation

  • Remove excess fat from pork loin and cut into 1/4″ thick slices.
  • Pre Heat oven to 400F
  • Heat a 10″ pan on medium heat. Mix herbs in breadcrumbs. Season pork with salt and pepper. Put the pork in the flour and tap off excess flour, put in egg and coat, then in seasoned breadcrumbs until covered. Place in pan and fry until golden brown. Place on a paper towel to drain away excess oilHeat sauce in 14″ pan while frying the pork
  • Place a little of the hot Napolitana sauce on an oven tray. Place fried pork on top of sauce. Sprinkle on some parmesan, and top with mozzarella. Put tray in hot oven and bake for 5 minutes.
  • Put Tortellini in boiling water and cook for 4 minutes. Remove with a slotted spoon and place in the pan of hot sauce. Stir until pasta is coated.
  • Broil pork for 60 seconds or until cheese is golden brown
  • Serve with a little parmesan and basil leavesPreparation time 10 – 15 minutes
