ingredients

  • 1 OSM Chicken Saccottini 600g
  • 2 cups of cherry tomatoes halved
  • 1 cup of corn
  • 1 cup of black beans
  • 1 cup of red peppers diced
  • 1 cup of orange pepper diced
  • 1 cup of red onions diced
  • 2 jalapenos seeded and diced small
  • 1 avocado diced
  • 1/4 cup of cilantro chopped fine
  • 2 limes juiced
  • 1/3 cup of olive oil
  • 2 TBS of white wine vinegar
  • Salt and pepper

preparation

  • Prepare all vegetables. Leave the avocado for last. Squeeze the juice from half a lime on the avocado to prevent it from oxidizing
  • Prepare the vinaigrette by mixing the olive oil, vinegar, and the balance of lime juice. Set aside
  • Cook the pasta for 5 minutes. Strain and refresh in cold water. Strain and place in a bowl. Pour the vinaigrette on the pasta and mix.
  • Add the peppers, onions, beans, and corn to the pasta. Stir until mixed.
  • Add the tomatoes, avocado and cilantro and gently stir. Season with salt and pepperPreparation time 30 – 35 minutes
    Cook time 5 minutes
    Serves 10 – 12 people as a pasta salad
