cheese  Tortellini

Ingredients

  • 1 package of O Sole Mio 4 Cheese Tortellini (9 oz)
  • 45 ml (3 tbsp) olive oil
  • 25–30 cherry tomatoes
  • 25 mini bocconcini
  • 20–25 torn basil leaves
  • 10 ml (2 tsp) balsamic vinegar
  • Salt and pepper, to taste

Preparation

  1. Cook the tortellini for 4 minutes.
  2. Drain and rinse them under cold water.
  3. Place the tortellini in a bowl.
  4. Drizzle 2 tablespoons of olive oil over the pasta and toss to coat.
  5. Heat a 10-inch skillet over medium-high heat and add 1 tablespoon of olive oil.
  6. Add the tomatoes to the skillet and season with salt and pepper.
  7. Cook for 3–4 minutes, or until the tomato skins begin to blister, stirring every 20–30 seconds.
  8. Transfer the tomatoes to the bowl with the pasta.
  9. Add the cheese and basil to the pasta and tomatoes.
  10. Drizzle with balsamic vinegar and toss together.
  11. Season with salt and pepper to taste.
