cheese  Tortellini

Ingredients

  • 1 package O Sole Mio 4 Cheese Tortellini (567 g)
  • 60 ml (4 tbsp) olive oil
  • ½ red onion, thinly sliced and halved
  • 2 garlic cloves, minced
  • 250 g (1 cup) ham, cut into small rectangles
  • 8 artichoke hearts, quartered
  • 10 large basil leaves, finely sliced
  • Parmesan cheese
  • Freshly ground black pepper

Preparation

  1. Heat a 12-inch skillet over medium heat. Add 2 tablespoons of olive oil.
  2. Sauté the onions for 2 minutes.
  3. Add the minced garlic and sauté for 30 seconds.
  4. Add the ham and continue cooking for about 3 minutes.
  5. Add the artichokes and cook for another minute. Remove from heat.
  6. In a pot of boiling water, cook the tortellini for 4 minutes.
  7. Using a slotted spoon, gently transfer the pasta to the skillet.
  8. Add 2 tablespoons of olive oil. Gently toss until everything is well coated.
  9. Serve and top with Parmesan, basil, and freshly ground pepper.
