Ingredients
Pasta salad
- 1 package (567 g) O Sole Mio 4 Cheese Tortellini
- 500 ml (2 cups) shredded radicchio
- 1 yellow bell pepper, thinly sliced
- 1 small onion, thinly sliced
- 6-7 figs, thinly sliced
- 250 ml (1 cup) fresh basil leaves, torn by hand
- 70 g (1 cup) walnuts, coarsely chopped
Dressing
- 80 ml (⅓ cup) mayonnaise
- 30 ml (2 tbsp) plain yogourt
- 7.5 ml (½ tsp) red wine vinegar
- 80 g (⅓ cup) crumbled blue cheese
- 5 ml (1 tsp) salt
- Freshly ground pepper, to taste
Preparation
Dressing
- In a bowl, add all ingredients and mix until creamy and smooth.
- Set aside
Pasta Salad
- Cook the pasta in boiling water for 4 minutes.
- Drain, then immediately rinse under cold water.
- Drain again and transfer the pasta to a large bowl.
- Pour the dressing over the pasta and gently toss until well coated.
- Add the radicchio, bell peppers, and onions, then toss until evenly distributed.
- Gently fold in the figs, basil, and walnuts until all ingredients are well combined.
