cheese  Tortellini

Ingredients

Pasta salad

  • 1 package (567 g) O Sole Mio 4 Cheese Tortellini
  • 500 ml (2 cups) shredded radicchio
  • 1 yellow bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 6-7 figs, thinly sliced
  • 250 ml (1 cup) fresh basil leaves, torn by hand
  • 70 g (1 cup) walnuts, coarsely chopped

Dressing

  • 80 ml (⅓ cup) mayonnaise
  • 30 ml (2 tbsp) plain yogourt
  • 7.5 ml (½ tsp) red wine vinegar
  • 80 g (⅓ cup) crumbled blue cheese
  • 5 ml (1 tsp) salt
  • Freshly ground pepper, to taste

Preparation

Dressing

  • In a bowl, add all ingredients and mix until creamy and smooth.
  • Set aside

Pasta Salad

  1. Cook the pasta in boiling water for 4 minutes.
  2. Drain, then immediately rinse under cold water.
  3. Drain again and transfer the pasta to a large bowl.
  4. Pour the dressing over the pasta and gently toss until well coated.
  5. Add the radicchio, bell peppers, and onions, then toss until evenly distributed.
  6. Gently fold in the figs, basil, and walnuts until all ingredients are well combined.
